How do you use spreadsheets to run projects?

Hello everyone, I'm just curious how do you take advantage of spreasheets while you manage a project and what do you use exactly: Airtable/GoogleSheets?

I usually use the online version of Microsoft Office Excel. But you can also use real estate management softwares if you want to do many things.
